Kenzie's Apple Crisp

Apple Crisp is my absolute favourite dish come Autumn. I make it for Thanksgiving, Christmas, and everything in between. A lot of people ask me what apples I use, and I tell them the truth... whatever apple I feel like throwing in it at the time! For this particular crisp, I used Northern Spies from Burnham Family Farm Market. They are located on Highway 2 between Cobourg and Port Hope.

The recipe yields about 6 servings, but I used larger bowls than usual so it worked out to 5 servings. The recipe works well in individual containers like mine, or in large baking dishes (preferably glass).

What You Need:

Crumble Topping

  • 1/2 cup flour
  • 1/2 cup quick oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking powder 
  • 1/2 teaspoon ground cinnamon
  • 1/3 Tablespoon butter (salted or unsalted, your choice!)
Apple Filling
  • 6 large apples, any variety you wish!
  • 3 tablespoons butter, melted
  • 2 tablespoons flour
  • 1 tablespoon lemon juice
  • 3 tablespoons milk 
  • 1/2 teaspoon vanilla extract 
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon 

Step One
Preheat the oven to 350 degrees F. Combine all of the crumble topping ingredients in medium sized bowl. Mix well until it resembles the picture above. 

Step Two
Combine melted butter and flour in a small bowl until thoroughly mixed. Add lemon juice, milk and vanilla and stir well. Then, add the brown sugar and cinnamon. (I find everyone has their own tolerance for cinnamon, add as much or little as you like!) 

Step Three
Line the bottom of the baking dish of your choice with peeled and cut apples. Pour the apple filling mixture over the apples and stir to coat the apples completely. I flatten the crumble topping and lay it over the apples, but you could also sprinkle small amounts of the topping over the apples to give it a more textured look. 

Step Four
Bake for 30 minutes or until the topping is golden brown and is set. Remove from oven and let it cool about 10 minutes before serving. 

Once you pull it out of the oven, I like to throw a clean dishtowel over the dishes to keep the moisture in while it cools. I definitely recommend serving it with Vanilla ice cream for the full dessert effect!
